This position focuses on enhancing operational skills through targeted training and support, ensuring that every dish meets our high standards.
Key Responsibilities
- Support chefs in creating exceptional guest experiences through consistent food quality.
- Monitor and improve key performance indicators related to food cost, wastage, and margin.
- Hold teams accountable for meeting operational standards and recipe compliance.
- Collaborate with venues to identify and address gaps in culinary execution and training.
- Assist resort teams in adhering to Health & Safety and Food Safety Management System policies through regular audits.
Additional Responsibilities
- Ensure operational excellence by auditing recipe accuracy, food presentation, and quality to drive standards and NPS scores.
- Maintain high cleanliness standards and ensure adherence to food technical practices and health and safety procedures.
- Identify chefs’ skills gaps to enhance team competency and knowledge.
- Manage administrative tasks related to recipe updates in systems like Starchef, TenKites, and DateCodeGenie.
- Provide pre-launch menu and recipe details to support successful menu launches, along with ongoing training for consistent execution.
- Strictly adhere to food safety regulations and support allergen visibility for guests.
- Collaborate with Finance to understand margin performance against theoretical GP targets.
- Advise Procurement on the best equipment to enhance commercial performance and reduce redundant stock.
- Conduct ongoing food quality reviews and product selection to maintain high standards while managing costs.
- Occasionally assist in menu dish development.
- Stay informed about TI/NPS scores for food quality and support initiatives to improve them.
- Review action plans with resort leadership following audit findings.
- Support franchise venues with back-of-house operations to ensure quality and brand standard compliance.
About You
- Strong knowledge of food production processes and techniques.
- Experience in multi-site, high-volume kitchen environments, including buffet and retail.
- Proven track record of implementing operational improvements to enhance food quality scores.
- Solid understanding of HACCP, Food Safety, and Health & Safety standards.
- Level 4 food safety certification.
- Able to manage multiple priorities and adapt quickly to changing requirements.
- Ability to influence and inspire teams across various locations.
